Are my kids the only ones who immediately head for the kitchen as soon as they come in from school? It never fails, as soon as we walk in the door before the book bags come off, they always go straight to the kitchen and start rummaging through for whatever they can find. I have started letting the kids make their own English muffin meals/recipes, the one below is Aidan’s favorite.
One meal they seem to love the most is pizza. We have done so many different pizza meals over the years, I really wanted to try something different. With Bays English Muffins, you could make any type of pizza you want. There are hundreds of combinations out there, but today I’m going to share one of our favorites. It’s kids friendly and super easy to make.
I used leftover chicken from the night before to make the bbq chicken, so Aidan was actually able to make this himself. If you have young children, definitely give them a helping hand; but see if they can do a few of the steps on their own.
|BBQ CHICKEN PIZZA|
|SERVING SIZE 4|
3/4 cup barbecue sauce
1 cup shredded cooked chicken
1/3 cup shredded smoked gouda cheese
1/3 cup shredded mozzarella cheese
4 BAYS English Muffins, any variety, split, untoasted
1 tablespoon finely chopped red onion
1 tablespoon chopped cilantro
Preheat oven to 400°F.
Mix barbecue sauce and chicken in medium bowl. Mix cheeses in small bowl.
Place muffin halves on baking sheet. Top evenly with chicken mixture; sprinkle with onion and cheese.
Bake 12 to 14 minutes or until cheese is melted and lightly browned. Sprinkle with cilantro.
Tip: Store-bought rotisserie chicken is a time-saver in this recipe.
