My Favorite Winter Comfort Food

I fully admit winter is my least favorite, yet favorite season. Totally makes sense, right?]

Let’s put it into perspective.

Who really like hanging outside in the cold weather? While it’s better than sweating like a pig during the summer months (if you have never been to South Carolina in August, count yourself lucky), to me there is nothing worse than 20 degree weather and the wind blowing furiously in your face.

Seriously, if it snowed here, I would probably just move because that would be my breaking point.

But while the wind and the cold temps don’t send me jumping for joy, nor does it have me signing my kids up for any winter sports, it does give me a chance to indulge in a few things that I absolutely love.

Outside of the holiday season, there is nothing more relaxing that curling up next to the fireplace with a good book and a cozy blanket. Even with the long days of running around and going to the park with a toddler (since I can’t stay in the house all day every day), nothing beats coming to a nice fire and enjoying a tasty bowl of soup to warm us up.

I’m pretty lucky that my kids will eat anything! One of their favorite winter meals is a nice bowl of loaded baked potato soup with a side of broccoli! Let’s be honest though, making loaded baked potato soup is a pain! Not only that, it can take a really long time to cook.
