Southern Smoked Sausage Breakfast Hash

This week’s “meal of the week” is breakfast!

We are early risers on the weekends and love being able to go all out for breakfast, since it’s not something we can always do during the week.

We may like a good hearty breakfast, but that doesn’t mean we want to spend all morning in the kitchen! This recipe is another one from my mom, that was a staple for us growing up. It takes less than 30 minutes to make and is something that the entire family will love!

This recipe uses Eckrich Polska Kielbasa Smoked Sausage Rope. It is naturally hardwood smoked and adds the perfect blend of spices to this breakfast meal. Eckrich Smoked Sausage is so easy to make, that it’s great to stock up on a few for those days you don’t have time to run to the store and just want to quickly re-create an old family recipe with ingredients you already have in your pantry.

With a variety of delicious flavors and forms including Original Skinless Smoked Sausage Rope, Cheddar Smoked Sausage Links, Turkey Skinless Smoked Sausage Rope, and Jalapeno & Cheddar Smoked Sausage Links, Eckrich Smoked Sausage proves to be the perfect option, so you can whip up a delicious, home-cooked breakfast, lunch or dinner at a moment’s notice – no instructions (or plan) needed.

To get started, I first slice the sausage, placing it off to the side once completed. I then proceed to prep the onion, red and green peppers by slicing them and sitting off to the side until needed.

Next, I move the sausage slices to a large skillet, where they will cook for about five minutes or until browned, then add in the pepper and onions. I allow the sausage and peppers to cook until they are tender enough for my liking.

In a separate skillet, I begin to cook the hash browns until browned, seasoning with a pinch of black pepper and salt.

My kids love eggs, so we also add fried eggs on the side as well! I can say this is easily my kids’ favorite part of the weekend. Another major plus is that the breakfast is filling, so it cuts down on their morning snacking. Not having to pack a ton of extra snacks for a Saturday trip to the zoo is huge benefit for us!

Southern Smoked Sausage and Breakfast Hash

1 (1 pound) package Eckrich Polska Kielbasa sSmoked Ssausage Rope, sliced

2 Tbsptablespoons. olive oil

1 red bell pepper, seeded and diced

1 medium onion, chopped

1 green bell pepper, seeded and diced

1 medium onion, chopped

1 (16 ounce) package frozen Southern-style hash brown potatoes

½  teaspoon salt

½  teaspoon ground black pepper

4 eggs

  1. Heat a large skillet over medium heat. Add the sausage slices and cook until browned, about 5 minutes. Remove from the skillet, reserving the drippings.
  2. Add the onion and red and green pepper to the drippings in the skillet.
  3. Cook and stir over medium heat until tender, but still crisp. Stir in the hash browns and cook for about 5 minutes, until browned.
  4. Return sausage to the skillet, season with salt and pepper.
  5. In a separate pan, fry four eggs. Serve fried eggs alongside breakfast hash.
